How To Make A Croque Madame and Croque Monsieur

The Croque Madame and the Croque Monsieur.

“Croque” means “crunchy bite” and “monsieur” means “mister”. So it literally translates to mister crunchy.  It is a hot sandwich made with ham and cheese.

The Croque Madame is the same thing with a fried egg, sunny side up on top. However some people will incorporate the egg into the monsieur by dipping the bread into egg before it is cooked.

Recipe

  • White bread – We choose our Breadski Sourdough
  • 1 egg ( if making one monsieur and one madame) 
  •  50g butter softened
  • 80g grated gruyere cheese 
  • 2sp Dijon mustard
  • 1tsp Worcestershire sauce
  • 1tbsp whole mustard
  • Wafer ham
  • 100ml milk warmed

Method

  •  Make the Bechamel sauce: Melt butter in a pot. ass in flour and cook on low for 1 minute. Slowly whisk in the milk until the mixture is smooth. Cook until thickened and add in half the cheese. 
  • Lightly toast the bread. Spread the Dijon one side of the bread. Add ham and the rest of the cheese holding back a small sprinkle. Add second slice of toast on top. Place this under the grill on medium heat for a few minutes. 
  • Spread the top of the sandwich with the Bechamel sauce and then a sprinkle of cheese.
  • Place this back under the grill until it has turned a golden golour and bubbling. 
  • Fry your egg, sunny side up and place on one of the sandwiches.
