How To Make a Welsh Rarebit

The Welsh Rarebit is probably one of the most well known dishes that has come out of Wales. This isn’t just melted cheese on toast. 

It is a hot cheese sauce that sates back to the 18th-century. Originally it was called ‘rabbit’ but over time (60 years later) was renamed rarebit to avoid confusion over the dish not actually containing any rabbit. 

Just picture a slice of toast topped bubbling, golden-brown flavourful cheese sauce. 

 

Ingredients

  • Sourdough toast
  • 350g Cheddar Cheese
  • 1 Egg
  • 3 tbsp Guinness
  • 1 tsp Mustard powder
  • 1 tbsp Worcestershire sauce
  • Pinch Cayenne Pepper
  • 2 tsp Flour
  • 1 tbsp Butter

Method

  • Melt the butter in a saucepan and add the flour
  • Add the cheese (leaving a tbsp to spare), Worcestershire, mustard powder, and cayenne pepper in a bowl or in the saucepan
  • Add the Guinness to moisten
  • Pour yourself a pint
  • Stir on a low heat until it is all melted and forms a thick paste
  • Leave the mix to cool a little and toast the bread
  • Spread the rarebit (cheese mix) over the toast and sprinkle the excess cheese on top
  • Pop under the grill until cheese is melted and bubbling and a golden brown
  • Keep any excess cheese mix in the fridge for a few says
