How To Make This Simple and Spicy Shakshuka

This is a North African and Middle Eastern dish. The word shakshuka comes from Arabic, meaning, “a haphazard mixture” or “all mixed up.” It is a hearty and healthy one skillet egg dish with spiced tomato. Have it for breakfast, lunch, brunch or dinner. 

Traditional Shakshuka uses tomatoes, onions and spices as the base with eggs poached on top. It is the national dish of many countries. It is so versatile, you can make it as hot or mild as you like. This is the perfect comforting vegetarian dish.

Ingredients

  • 2 tins of chopped tomatoes
  • Crusty bread – We used MMM homely bread 
  • 4 eggs
  • Green pepper – finely chopped
  • Red Onion – diced
  • 3 Garlic Cloves finely sliced
  • 1 red chilli finely diced
  • 1 tbsp tomato paste
  • 1 tsp Sugar
  • 1 tsp Cumin
  • 2 tsp Smoked Paprika
  • Small bunch Fresh Parsley chopped
  • Feta Cheese
  • Salt & Pepper to season

Method

  •  Melt oil over medium heat in pan.  Add the chopped pepper, salt and onion and cook until they soften, about 5 minutes
  • Add  garlic, tomato paste, cumin, paprika and chilli for a minute or two
  • Pour in the two tins of tomatoes and sugar, season and mix well
  • Reduce to a gentle simmer and let it cook for 5 minutes
  •  Use back of a large spoon to make four wells in the sauce. Crack an egg into each well
  • Put a lid on the pan, low heat, let the eggs gently poach over 5 – 8 minutes depending on how runny or cooked you want your eggs
  • Take the pan off the heat and scatter over the fresh parsley and crumble the feta on top
  • Serve with warm crusty toast on the side.
