How To: Smashed Avocado and Eggs on Sourdough Toast

This is the perfect recipe for breakfast or lunch. It’s filling, healthy and only takes 5 minutes to put together. 

This recipe uses a combination of fibre, protein, and healthy fats. Avocados are a great source of potassium, fibre, heart-healthy monounsaturated fat, and folate, while eggs provide protein and micronutrients like choline, B vitamins, and vitamin D.

  • Sourdough Cob
  • Ripe Avocado
  • Cherry Tomatoes
  • Salt & Pepper to taste
  • Squeeze of lemon
  • Sprinkle of chilli flakes
  • 2 eggs
  • Toppings of your choice. We used homemade chilli peanut oil. We also recommend White Mausu’s Peanut Rayu. 


  • Toast slices of sourdough
  • Slice ripe avocado and scoop out inside
  • Add salt, pepper, chilli flakes to your liking
  • Add squeeze of lemon or lime
  • Mash the avocado with a fork altogether with the seasonings
  • Spread avocado mix on toast
  • Half cherry tomatoes and scatter across avocado
  • Poach or fry your eggs and lay on top of each slice
  • Season egg with salt and pepper and whatever toppings you like
