This is the perfect recipe for breakfast or lunch. It’s filling, healthy and only takes 5 minutes to put together.
This recipe uses a combination of fibre, protein, and healthy fats. Avocados are a great source of potassium, fibre, heart-healthy monounsaturated fat, and folate, while eggs provide protein and micronutrients like choline, B vitamins, and vitamin D.

Recipe
- Sourdough Cob
- Ripe Avocado
- Cherry Tomatoes
- Salt & Pepper to taste
- Squeeze of lemon
- Sprinkle of chilli flakes
- 2 eggs
- Toppings of your choice. We used homemade chilli peanut oil. We also recommend White Mausu’s Peanut Rayu.
Method
- Toast slices of sourdough
- Slice ripe avocado and scoop out inside
- Add salt, pepper, chilli flakes to your liking
- Add squeeze of lemon or lime
- Mash the avocado with a fork altogether with the seasonings
- Spread avocado mix on toast
- Half cherry tomatoes and scatter across avocado
- Poach or fry your eggs and lay on top of each slice
- Season egg with salt and pepper and whatever toppings you like
