Shallot and Three Cheese Toastie

Try this delicious balsamic shallot and three-cheese toastie. This sandwich is packed full of flavour.

This isn’t just your ordinary cheese and onion sandwich. By slow-cooking the shallots with balsamic vinegar combined with 3 kinds of cheese and add a little mustard it is packed full of flavour. 

Ingredients

  • Olive Oil
  • 8 Finely sliced Shallots
  • 2 Tbsp Balsamic vinegar
  • Butter
  • Dijon Mustard
  • Cheddar
  • Mozzarella
  • Gouda
  • Bread – We choose MMM Traditional Bread. Sourdough would also go well with this recipe. 

Method

  • Heat olive oil in pan. Add the Shallots and salt and pepper for seasoning.  Gently cook the shallots on low heat for 25 – 30 minutes. 
  • Add balsamic vinegar and cook until evaporated then cool
  • Butter both sides of bread. 
  • Spread one side with mustard. 
  • Layer all the cheeses on one slice of bread. 
  • Add the shallot mix, spreading out evenly, and top with the second slice of bread. 
  • Add butter to the pan and put on medium heat. Fry the toastie, cooking for approx 3 minutes on each side or until golden brown and the cheese is melted. 
  • Enjoy
