Sourdough bread with the addition of spelt flour contains a higher amount of protein compared to regular sourdough cob. Spelt flour is rich in protein, magnesium, copper, and vitamins B1 and B3. These supplements improve the blood pressure, help with blood production, and are necessary for proper functioning of the nervous system

During leaven fermentation, the amount of phytic acid is reduced, ensuring better digestibility. Spelt sourdough bread also has a higher fibre content which is an important element for digestive health; lowering cholesterol and helping to remove toxins from the body.

It is worth noting that the addition of spelt flour to sourdough bread increases the total amount of tryptophan – an amino acid essential for mental health and wellbeing.

Spelt flour contains less gluten than common wheat, which makes this sourdough bread easier to digest.
