How To: Maple Glazed Bacon and Smoked Cheese Toastie

We went Canadian this week with this delicious cheese toastie. Slathering streaky bacon in a sweet maple glaze and pairing it with a smokey melted cheese. All of this wrapped up in our Spelt Sourdough Cob.
Ingredients
For the Toastie
4 slices of streaky bacon
2 slices of sourdough bread ( we recommend our Spelt Cob)
2 slices of Smoked Cheese
Butter to spread
Maple Glaze
1 – 2 Tbsp Maple Glaze
1/2 Tbsp Brown Sugar
1 tsp Balsamic vinegar
1/2 tsp Dijon mustard
pinch of Cayenne pepper
pinch of salt
Method
Preheat oven 175C. Combine all glaze ingredients
Brush both sides of the streaky bacon and lay out on baking tray. Pop in the oven to bake for around 10 – 15 minutes.
Take out reglaze and flip over and reglaze again. Then put back in the oven for a further 10 minutes until sticky.
Butter both sides of bread. Add a layer of smoked cheese, then the layer of maple bacon and another layer of cheese.
Either use a sandwich press or fry in a pan for about 5 minutes or until the cheese is melted and golden on the outside.
